Vissoux (Chermette) Beaujolais Nouveau Origine Vieilles Vignes 2021

100% Gamay from 40- to 100-year-old vines. This has much more structure than your typical Nouveau, while still retaining the easy-drinking quality of Pierre Chermette's classic Primeur. He uses only indigenous yeasts (no banana flavor yeast cultures as used in the mass market brands); then a traditional, longer fermentation, aging in oak foudre and bottling with no filtration, and without adding sulfites in most vintages. It is as natural a Beaujolais as one could have had in a café in Lyon in the 1940s. Serving Suggestions: Turkey of course, while it's still fresh tasting, but also a rustic pate, with cornichons and coarse mustard.
