Their encounter with the consultant Pierre Masson led them naturally to biodymanics the following year. Each parcel is vinified separately, in barrel, without added sulfur and without blocking the malolactic fermentation. The purity of ripe fruit is immediate, like the creaminess of texture, depsite the absence of dosage. The quest for purity is already convincing. This contemporary and lively approach to champagne, very unique, deserves a star this year. 2018 Brut Nature Papillon: A poetic expression of Pinot Noir from the Fosse-Grely parcel in Essoyes. Very young, this 2018 reveals an energetic serenity through an aromatic purity, an invigorating burst of flavors where the floral mixes with the salty and delivers a magnificent, luscious texture on the palate.
