It has notes of quince, fennel, green apple, pollen, dry yellow flowers and chamomile, with lots of complexity, with low alcohol (they struggled to reach the minimum required by the appellation, 13%) and with a super tasty palate. It has an almost salty finish and vibrant acidity and freshness (it has a pH of 3.2). Atypical and outstanding. This variety should be one of the weapons against climate change. 2,820 bottles produced. Drink: 2022-2028. (Sep 2022)"
