With its mineral notes of iodine and salt, light hints of nuts and green olives and refreshing acidity, it’s almost addictive, especially if you have prawns sautéed in garlic and herbs on hand. Opening inhalations offer deep bread dough (rye), caraway seed, and black pepper notes that delight the senses immediately with their directness; further air contact sees the pepperiness diminish and the rye bread accelerate, also the seediness, meaning caraway and sesame. Entry is mineral dry and yeasty, but with more substance than many Finos; midpalate firm, salty dry, and peppery once again. Head and shoulders above most other Finos in terms of core substance. The palate is staunch and doesn't back down; the high-toned nut and citrus flavors seem classic and elevated. And the finish is intense and frames everything in walnut oil and toast. (Jun 2009)"

Producer notes: "Dry, but full wine coming from the Lustau bodegas in Jerez de la Frontera; elegant, but rich to taste. The richness is balanced by its crisp, flor character to give a lingering aftertaste. Awarded Silver Medal at IWC 2006. Drink as an apéritif or as a wine with food; particularly good with seafood. Serve chilled. Alcohol:15.5% by volume. Grape Variety: Palomino Fino."
