Producer notes: "This wine is from the organically farmed and famed Sterling Ranch. This vintage is inspired by the South African style of Chenin, fermented and aged in a combination of French oak cask and Austrian 500-liter puncheon for 10 months. It displays lovely aromas of green apple, honeysuckle and subtle notes thyme and lemon peel. The aromas are echoed on the palate, where they mingle with savory elements of almond skin and sea salt. While a hint of creaminess on the palate helps to balance the acidity, this is a wine that is defined by its acidity, nerve and focus. Due to this natural style of winemaking this wine will have a slight hazy to the appearance."
