La Chablisienne is a co-op established in 1923 in the Chablis appellation. Besides Chablis Premier Cru and Grand Cru, they also produce this entry-level offering made from Chardonnay vines growing three to five miles outside the strictly delimited boundaries of the Chablis AOC. The various vineyard sites lie in an arc tracing from Saint-Bris just southwest of Chablis proper to Dannemoine to the northeast. The juice is fermented and aged entirely in stainless steel to retain freshness. Very pure Chardonnay fruit on the nose, crisp acidity on the palate with a marine salinity on the finish not unlike that of real Chablis.
