The Weissburgunder, aka Pinot Blanc, is grown on heavy limestone and sandy soils and farmed organically with elements of biodynamics woven in. Whole-clusters are thrown into a basket press before moving into neutral barrels to nurture the elegant structure and coalesce slowly. Smoked honey, rock pile minerality, almond cream on warm apple fritters, green melona bar and lemon oil. Pour with side-stripe prawns, herby butter and your feet up.
