From the Kimmeridgian clay-limestone soils of Buxières-sur-Arce in the Aube, Argile is Bertrand Gautherot’s Chardonnay-forward cuvée, made entirely from estate-grown, biodynamic fruit. Labeled “R20” for the 2020 harvest, it’s a single-vintage wine in everything but name—fermented with native yeasts, aged in used barrels, and bottled without dosage or fining. The result is uncompromisingly pure. Aromas of lemon oil, green apple, chalk, and sea breeze lead into a palate that’s tense, layered, and quietly powerful. There’s no softness here—just structure, salinity, and that leesy, oxidative nuance that defines Vouette et Sorbée’s house style. The mousse is fine but tactile, and the finish stretches out with mineral persistence.
