David Trousselle is a small producer in the Hautes-Côtes de Beaune, located in a protected valley between St. Aubin and St. Romain. Climate conditions here favor Chardonnay, but Trousselle also makes a small amount of Pinot Noir. For this special “Olympe” cuvée, named in honor of his daughter’s birth, he makes a barrel selection, most of which represents older vines. The wine is beautifully textured, wonderfully concentrated, with the promise of at least ten years of ageing.
