The Bourgogne Rouge Hautes Côtes de Beaune comes from a parcel located in Pommard of less than one hectare. The vines were planted in the mid-'90s on the classic mixed and deep clayey limestone soil, characteristic of this municipality of the Cotes de Beaune. The destemming is done in its entirety, followed by a fermentation of indigenous yeasts with very few punching down or pumping over, malolactic carried out before racking. The wine is aged in cask for 16 months. If necessary during elevation or bottling, Seichii uses minimum dosages of SO2.
