93 points Zekun Shuai (JamesSuckling.com): "Intense yeasty autolysis with crackers, sourdough and stones that lends itself well to the sliced apple characters. Bone-dry and austere on the palate with subtle, creamy perlage and concentrated flavors, and a rather mineral finish. 36 months aging on the lees. Disgorged in October 2021. (4/6/23)"

92 points Antonio Galloni (Vinous): "The NV Dosage Zéro is brisk and nervy right out of the gate. Green pear, jasmine, slate, crushed rocks and white pepper are all finely delineated. Bright saline notes pull it all together on the super-expressive, chiseled finish. Disgorged: May 2022. Drink: 2024-2032. (Mar 2024)"

92 points Audrey Frick (JebDunnuck.com): "The NV Champagne Dosage Zero pours a straw/yellow hue and offers a more savory profile on the nose, with notes of chamomile, fennel, golden plum, orange rind, and brothy saline. This continues through the palate, which has a medium to full-bodied frame, lending it more tension and structure. With a pithy texture, a frothing mousse, and a snappy touch of bitter almond on the finish, it should be food-friendly and is going to show well over the coming 7-8 years. Disgorged in May 2022. Drink: 2024-2033. (12/20/24)"

92 points Sarah Mayo (The Wine Independent): "Pinot Meunier from very chalky soil comprises 50% of the blend in the Dosage Zero with the balance made of 25% each of Chardonnay and Pinot Noir. Light burnished gold in color, the aromas are open-knit and clean with notes of dried red fruits, saltines, and chalk dust. The light to medium-bodied palate is frank and direct at first, then reveals a textured mid-palate enlivened by soft acidity. 50% of the 2019 base wine was barrel fermented and aged on lees 36 months. Reserve wines that were selected from warmer vintages make up the other 50% and bring a generous, vinous quality to this zero dosage wine. The bottle tasted was disgorged May 2022. Alcohol 12%. Drink: 2023-2038. (11/8/23)"

92 points Wine Enthusiast: "As dry as the name implies, the Champagne is also full of fruit. It has a crisp texture, tightly wrought and with both citrus and green-apple flavors. Drink now. Alcohol 12%. (Sep 2023)"

92 points Bettane & Desseauve Guide (2025).

92 points Essi Avellan, MW: "(50% Meunier, 25% Chardonnay, 25% Pinot Noir). The newest baby in the Paillard family, this bone-dry Champagne is led by bold Meunier fruit. The broad blend, however, contains fruit from some 30 villages and plenty of oak-fermented reserve wines. Fragrant and floral, it is deliciously fruity on the nose, with mild oaky nuances supporting in perfect harmony. The palate is vinous, as Bruno Paillard likes it, concentrated yet refreshed by a fine, firm acid line. The lovely purity of fruit continues until the long finish, which does not feel too dry. Disgorged 3/20; dosage 0g/l. (Aug 2022)"

91 points Yohan Castaing (Wine Advocate): "There was no dosage for this cuvée disgorged in October 2021. The Bruno Paillard NV Dosage Zéro, elaborated with a majority of vins de réserve, expresses a vibrant and pure bouquet with aromas of almond, pear, peach, spring flowers, menthol and some toasty hints. Tense with racy acids, the palate is medium to full-bodied with a chalky, saline finish. It's a very fresh and pure Champagne. Drink: 2023-2030. (4/20/23)"
