94 points Yohan Castaing (Wine Advocate): "The Bruno Paillard NV Cuvée 72, aged 36 months on lees with an additional 36 months post-disgorgement, was disgorged in November 2018 with six grams per liter. It’s an excellent Champagne, offering aromas of pastry, lemon, blood orange, spices, saffron and touches of cedar. Medium to full-bodied, seamless, rich and slightly creamy, it’s vinous and lively with a salty and iodized finish. It can be drunk any time over the coming five years. Drink: 2023-2030. (Apr 2023)"

The cuvée aims to demonstrate the impact of post disgorgement aging on champagne by extending the bottle aging of the same NV Première Cuvée assemblage of 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier which has 36 months of lees aging, with an additional 36 months of post disgorgement aging before release. Hence 72 months. Spun yellow gold in color, the Cuvée 72 has intensely toasty and layered aromas of ripe orchard fruit, nougat and honeycomb with a grace note of mint. The medium-bodied palate offers impressive richness with a supple, citrus-laced line of acid running through to a medium-long, saline finish. This is a rich, extra-brut style with five grams per liter dosage. The bottle tasted was disgorged November 2018. Alcohol 12%. Drink: 2023-2033. (11/8/23)"

The Cuvée 72 brings the approach further, giving the wine equal length of ageing on the lees and post-disgorgement, totalling 72 months. This July 2019 disgorged bottle is yeast-complexed with layers of aromatic wood and charred spiciness adding on its broad spectrum of aromas. Ageing aromas are starting to take over from the primary fruity tones. Beautifully textured and elegant on the silky palate of great refreshing length, the overall impression still remaining pure, precise and refined. (Aug 2023)"

A gregarious, concentrated style with an integrated oxidative character of savoury nuttiness propped up with honey, cooked orchard fruits and maple syrup aromas. The mousse is delicate, though, the impression of development tempered by low dosage and fine acidity. A smart balancing act indeed, and a clear example of the warming, settling effect of post-disgorgement ageing. (2022)"
