The bunches are cooled down before being put through a sorting table, destemmed and transported by gravity (in an "ovi" type vat) to the stainless steel fermentation tanks, where it fermented with indigenous yeasts and went through malolactic. It matured in French oak barrels for 20 months... It was bottled in August 2023. It has a long life ahead of it. Bravo. Drink: 2025-2045. (6/13/24)"
