Olivier notes that it is important to keep crop levels low here. A light lemon touch to the colour, with a fine intensity of the purest white fruit on the nose. It has a strict flint- and crushed stone-scented nose that's very minerally and uncompromising. The palate is fresh, vibrant and beautifully balanced on the entry with just the right amount of acidity. It has wonderful sapidity and tension on the finish with a dab of ginger on the aftertaste.
