Unwinding in the glass with aromas of pear, peach and sweet citrus oil mingled with notions of honeycomb, white flowers and toasty reduction, it's medium to full-bodied, dense and layered, with huge reserves of concentration and structuring dry extract, bright animating acids and a long, electric finish. Having experimented elsewhere at 14,000 plants/ha (0.7 x 1m), Olivier upgraded to 30,000 (0.33 x 1m) then, when the law was changed to outlaw this density, he continued at 20,000 plants (0.5 x 1m) when increasing the size of the plot in 2007. Today he has 0.40ha at 30,000 and 0.30 at 20,000. Super chiselled on the nose, entirely white fruit, then almost ludicrously concentrated on the palate, while retaining an austerity of profile which is just a question of youth Drink from 2030-2040.
