Salty, incredibly bright and very long. From seven grape varieties planted in a single 0.5-hectare plot in Chavot. Co-fermented pinot gris, chardonnay, pinot meunier, petit meslier, arbanne, pinot noir and pinot blanc. From a perpetual reserve of 2005 to 2021 (50% is 2021). Disgorged October 2024. Aromatically intense and light on its feet, Les 7 has so much to offer. Lemon confit, , marzipan, white flowers and tangerine oil grace the palate. This release is based on 2021, with 50% reserve wines from a solera dating back to 2005. The blend of varieties and vintages makes for a compelling Champagne. This is elevated juice. Dosage is 2.5 grams per liter. Disgorged: November 2023. Drink: 2024-2032. (Mar 2024)"

18% Pinot Meunier, 18% Chardonnay; 17% Pinot Blanc, 15% Petit Meslier; 14% Pinot Noir, 10% Fromenteau 8% Arbanne. This is a singular wine in the region as it is both a combination of all seven grape varieties and 40% of the blend is from a continous solera started in 2005. There is an art to finding an acid and sugar balance across all seven grape varieties when determining picking dates, which is a challenge that Aurelien embraces and appreciates. The resulting wine is dense, rich, racy and endlessy pleasing.
