Aurélien Laherte’s Blanc De Noirs is composed of 50% Pinot Noir from Le Breuil in the Marne Valley and 50% Pinot Meunier from the Côteaux Sud d’Epernay (Chavot and Moussy). These vineyards are all biodynamically farmed, mostly on chalky soils. The wine is fermented and matured in a combination of large format foudres and oak barrels where it undergoes full malolactic fermentation before bottling with zero dosage.
