Producer notes: "The grapes were harvested with low sugar levels and vibrant natural acidity, with two-thirds whole-cluster pressed and the remaining third crushed with two days of skin contact, then cold-fermented in stainless steel to preserve minerality, aromatics, and freshness, followed by an arrested secondary fermentation and four months of aging on the lees before sterile filtration, making it an ideal pairing for oysters, grilled fish, and spicy dishes."
