Noir de Bourgogne blackcurrants grown on the slopes of the Burgundy Grand Crus around Nuits-Saint-Georges are harvested in July and immediately frozen until use. The fruit is macerated in neutral sugar beet distillate at room temperature for 4–5 weeks.
The infusion is decanted, but not filtered, and slowly blended with sugar beet sugar
