There’s mouthwatering crushed raspberry notes, a hint of cherry, and a fine texture which avoids the too-tannic cut of some saignées. But the clincher is the faint spicy, creamy hint achieved by a tiny influence of oak. Impressive and satisfying. 100% Pinot Noir. Stainless steel. 5% made in large oak. Dosage: 6g/L. Drappier' s Aube pinot noir and its attentiveness in maceration make saignée particularly well suited here. A medium to full crimson hue is backed by layers of strawberries, raspberries and red cherries. The soft, creamy feel of Aube pinot is well melded with low dosage and perfectly gauged phenolic bite.
