Persistent from the get-go, with an expansive mousse, it’s a powerful wine with a ripe core of citrus oils, savory salinity, and driving mineral texture that’s broad on the palate. It is based on the 2019 vintage with a 30% addition of a perpetual reserve that goes back to 1986. Subtle salty polenta and gentle Golden Delicious apple notes are tender on the nose. With air, more floral notes of apple blossom and fresh green apple appear. The mousse is fine, and has a deeply salty tang, accentuated by lemon, dispersed by fine mousse. This is slender and taut despite the relative ripeness of the fruit, with a deeply satisfying umami finish that seems to be of purest protein. Zero dosage. Disgorged: November, 2022.
