50% Chardonnay and 50% Pinot Meunier from vines in the process of organic conversion, planted on 5 hectares of clay-limestone soils in Chavot-Courcourt. Hand-harvested. This cuvée is entirely without additives, no dosage, and no sulfites: after the first fermentation, to achieve the secondary fermentation, Fabian uses press juice from the previous vintage, which he keeps frozen for a whole year, and uses it as a starter for the current year! Aged on lees, disgorged in January 2024, with fewer than 2000 bottles produced.
