Blanc de Blancs is the game for Bonnaire, and this cuvée presents the signature of their home of Cramant, capturing the tension, mineral depth and power of the village. A pale, bright straw hue heralds its precision, carried through a palate of excellent depth and concentration, built around a tense core of apple, beurre bosc pear, grapefruit and lemon, with layers of aniseed. Floral, stony, haunting nose. Stony in mouth, fairly full-bodied, deep and pure, with tension. Zero dosage, undergoes malolactic fermentation, base wine is from 2016, 100% Chardonnay. (11/15/22)"
