Really quite complex at the finish even if the aromatics are totally undeveloped. Olivier Bailly loves the Séchet component in demi-muid but there is not enough of it to make a separate bottling. Here too there is just enough wood present to bear mentioning on the more floral and spicier aromas of citrus blossom and mineral reduction.
