Rouzé farms all her vines sustainably, respecting the environment and preserving fauna and flora. Vinification is done in thermo-regulated stainless-steel vats to preserve freshness and aromatics. The wines are kept on fine lees until bottling to add texture, complexity, and body. Rouzé makes only one cuvée, as it allows her to spend all her time and attention on special village-level Quincy! Tasting notes: this wine has aromas of citrus fruit and freshly-cut herbs. On the palate, flavors of grapefruit and lime arrive, with a touch of citrus pith. It has medium-body and a crisp, mineral finish.
