In 2016, West Cork Distillers produced a trio of 12 year old Irish whiskeys initially matured in bourbon casks before being finished in a selection of casks. This expression was allowed a finishing period in Port casks, resulting in juicy fruit notes all the way through. Nose: Blueberries, fudge, mint leaf and vanilla-rich barley. Palate: Malt loaf and salted butter. Hints of dark chocolate. Finish: Strawberries and cream.
