Whipnose is a collaboration between Seven Stills and Pacific Brewing Laboratory. It is made from Pac Brew Lab's double IPA and opens up with huge aromas of California hops and is bursting with citrus and floral notes. It then opens up with rye spiciness and caramel, and finishes with smooth Vermont maple sugar. This bottling is from an exclusive private barrel for Woodland Hills Wine Company.
WHWC Staff Notes: "A few weeks back, we had a unique opportunity to acquire a few private barrels of Whipnose whiskey from the guys at Seven Stills of SF. Last week, I got the call...our barrels had been bottled and the shipment had arrived. And you know I had to take one home. This whiskey starts its life as a bottle-ready Double IPA which is transformed into a little taste of heaven. Rye and Vermont maple sugar are added to the beer and it is then distilled and housed in five-gallon casks that breathe character into the whiskey. This citrus-laden dram is rich and complex with hints of Simcoe and Cascade hops. On the palate, the maple brown sugar shows its sweet face and transforms the rye and hops into a delicate sipping whiskey. The guys at Seven Stills are once again blowing my mind.
