It offers a compelling mix of dried herbs, lemon confit, marzipan, dried flowers and earthy tones. Rich and creamy, with tons of persistence, the 2016 has so much to offer. Complex candied-citrus, fresh-nut and chalky flavors at the long, complete finish. A cuvee based on wines from the Grand Cu villages of Cramant (43%), Chouilly (25%) and Oger (2%) with 30% from the 1er Cru village of Cuis. Drink now. (1/5/22)"

Mingling aromas of confit citrus, hazelnuts, buttery pastry and dried fruits, it's medium to full-bodied, pillowy and charming, with an ample core of fruit, lively acids and a seamless, elegant profile, concluding with a characteristically chalky finish. 92+ points John Gilman (View From The Cellar): "The 2016 Gimonnet “Cuvée Gastronome” Blanc de Blancs was disgorged in May of 2021 and finished with a dosage of five grams per liter. Seventy percent of the fruit for this bottling hails from the grand cru villages of Cramant, Chouilly and Oger, with the final thirty percent from the family’s vineyards in the premier cru of Cuis. The wine offers up a lovely young nose of delicious apple, pear, chalky soil tones, brioche, spring flowers and just a hint of almond in the upper register. On the palate the wine is bright, full-bodied and still youthful snappy, with a lovely core of fruit, fine mineral drive and cut, pinpoint bubbles and a long, nascently complex and very nicely balanced finish. I would opt for tucking this fine bottle age away in the cellar for three to five years and let it truly blossom, before I started drinking it, but even in its youthful guise, it is already pretty tasty! 2024-2055.
