Still the textbook, dill/pickle brine forward blanco aroma that I've grown to admire so much that I use DJ Blanco as a teaching tool in instructional classes; second round of sniffing opens up another entire realm of fragrance in the tightly wound forms of black pepper, burnt match, cigar box and sage; an olfactory clinic on what blanco tequila should smell like when it's at its best. Entry is peppery, highly vegetal, citrusy, piney and sap-like; midpalate taste profile stresses the dill, sage, and bay leaf elements, but likewise the bittersweet agave juice. Finishes long, a touch salty and vegetal. State of the art. (Sep 2012)"
