WHWC Staff Notes: "This is truly an exciting wine with an unbelievable 15 years of age from a leading premier cru vineyard—and at unbeatable pricing! Daniel-Etienne Defaix is now the 14th generation to continue this long family tradition of producing wines from these storied vineyards. All the wines at the estate are vinified in a similar fashion, with Defaix releasing them to the market only after accruing several years of bottle age. With this approach, Defaix feels that the market has the pleasure of having access to wines that more fully express the remarkable and unique terroir that is Chablis. Resting on the fine lees in stainless steel tanks for at least 18 months (and sometimes longer for the premiers and grands crus) the wines undergo a type of bâtonnage without exposure to any air, and without the addition of any sulfur (utilizing the CO2 created by the malolactic fermentation to conserve the freshness of the wines). He is firmly in the 'unoaked' camp of Chablis producers. This would be a fine accompaniment to all white meats, including rack of veal, farm-raised chicken (best when immersed in crème and married to morels!) or risotto with black or white truffles. I have had many bottles of this wine, and you would never know that this wine is 15 years old!
