Mycorrhizae is a micro fungus living on plant roots that metabolises the soil and helps the vines to ingest minerality. By only ploughing these vineyards by horse, the theory is that soil compaction is reduced and hence the roots achieve not only greater penetration, but increased oxygenation, which, in concert with elimination of chemical treatments, enhances mycorrhizal life. The family hopes that in time this will bring greater mineral character in their wines. The result already exemplifies the science to dramatic effect as the mineral, saline, iodine definition of Avize is accentuated in De Sousa’s exacting regime. True to its mantra it is deeply salt mineral in texture, the roots of these old vines boring deep into the ancient chalk, balancing the body and succulence of white peach and white nectarine and the spicy crunch of white grapefruit. The toasty complexity and spicy presence of barrel fermentation meets the body and presence of old-vine Avize chardonnay, held in well-harmonised balance in spite of its proportions, thanks to a finish of dynamic acidity. A cuvée of unique character, great presence, and enduring persistence, this is the finest Mycorhize from De Sousa yet. (2020-2021)"

It is tensely textured and strongly mineral, showing the effect of the chalk soil on the wine. Acidity and tight citrus suggest this bottling is young. It will be better from 2020. (12/31/19)"
