WHWC Staff Notes: "My first experience with Txakolina (pronounced cha-ko-leena) was on a trip my to Spain a few years ago. My wife and I were staying in San Sebastián, which is a foodie's paradise as many of you may know. The pintxos (a.k.a. tapas elsewhere in Spain) were amazing, and walking from bar to bar to try their specialties makes for an unforgettable night of eating and drinking. This is Basque country, hence the strange spelling you see on wine labels from the region. Txakolina makes for a great pairing with pintxos as it is a perfect match with seafood and shellfish, and this region of Spain is literally awash in all manner of ocean-going creature. Txakolina is medium weight, brisk, and bright with a bit of spritz and a wonderful lime and lemongrass character. It's served with a flourish in the San Sebastián bars where they pour it from two feet above the traditional rustic glass. The grape used to make the Antxiola Txakolina is Hondarribi Zuri, although other versions can include Folle Blanche. It's dangerously easy to drink, and from experience I've found you should always have a bottle in backup. It was a perfect match with our Dungeness crab crispy tacos with a chipotle crema." - Tim Coles
